Confectionery is a topic close to many people's hearts and its manufacture involves some interesting science. The confectionery industry is divided into three classes: chocolate, flour and sugar confectionery. It is the background science of this latter category that is covered in The Science of Sugar Confectionery. The manufacture of confectionery is not a science based industry, as these products have traditionally been created by skilled confectioners working empirically. In fact, scientific understanding of the production process has only been acquired retroactively. Historically however, sugar confectionery has had technological synergies with the pharmaceutical industry, such as making sugar tablets and applying panned sugar coatings. This book gives an introduction to the subject, with some basic definitions and commonly used ingredients and then moves on to discuss the chemistry of various types of sugar confectionery. These include "sugar glasses" (boiled sweets), "grained sugar products" (fondants), toffees and fudges, "hydrocolloids" (gums, pastilles and jellies) and concludes with a chapter dedicated to sugar-free confectionery.

By Nils Stormby A very interesting and informative book about all aspects of sweets and sweeteners. different ingredients, chemistry, flavouring etc etc. Too scientific for the general consumer but a gold mine for those who are familiar with basics in chemistry and biochemistry. And what about a sugar-free future?

4 of 5 people found the following review helpful. A niche product By A. Pezzuto This is one of a handful of books I own that I recommend to people only under careful consideration. If you enjoy food science, have a working familiarity with high school or low level college chemistry, and are the sort of person who would consider making your own fireworks or mixing your own fertilizer from mail order chemicals than this book is for you! It is extremely well written and well within reach of anyone who wants to understand it. There are several chemical equations shown, as well as some chemically and thermodynamically complex processes well explained. Again, if that sounds like a good thing, this is a great book. However if that sounds like to much work, go look to something that is more of a recipe book, like "Who Wants Candy?".

This book discusses the scientific and technical aspect of making various types of candy. It broaches the topics that are vital to the confectionery industry such as coloring, flavoring, manufacturing equipment, etc. I cherish this book immensely. Buy it, and you will not regret it.

There is an adult on the cover, as you can see, and no illustrations at all inside apart from a single, repeated, but faint line drawing of what appears to be a wire-hair dachsie that might be a puppy.On the other hand, it's a little lightweight planner that does the job for me.

"Pretty girl, young man, old man, man with a gun" By Bachelier After: Hero = "someone like myself" and Villain = "someone like my enemy" and Heroine = "prettiest girl I never had" most writers break down, except for the occasional Comic Relief = "my wisecracking avuncular friend." Occasionally you get "Old Man with waning powers" or Hera = "Manipulative Matron" or some others straight out of Greek mythology, and if writers are really stretching they can come up with a Loki/Puck character, or occasionally a Caliban or a Rakshasa. But the curse of every hack is the "crusty but benign...""The first one is set at a large Eastern law school, presumably Harvard. The series is irresistibly entitled "The New Lawyers." The running characters are a crusty-but-benign ex-Supreme Court justice, presumably Oliver Wendell Holmes by way of Dr. Zorba; there's a beautiful girl graduate student; and the local district attorney who is brilliant and sometimes cuts corners. The second one is called "The Amazon Squad." The running characters include a crusty-but-benign police lieutenant who's always getting heat from the commissioner; a hard-nosed, hard-drinking detective who thinks women belong in the kitchen; and the brilliant and beautiful young girl cop who's fighting the feminist battle on the force. Up next is another one of those investigative reporter shows. A crusty-but-benign managing editor who's always gett..." 1 of 1 people found the following review helpful. One of the best books on preaching I have ever read!!!! By Tim I read this book because Warren Wiersbe recommended it. It has to be one of the best books on preaching I have ever read! Phillip brooks goes right to the heart of the matter and deals with what preaching really is: preaching is truth with personality! Every chapter is excellent and insightful, and although the lectures were given back in the 1870's, it is very easy to read! Also, if you have a hard time reading books with small print, forgotten books has done an excellent job of printing this book in larger font!

Phillips Brooks: Christ's preacher By len Phillips Brooks is, hands down, the best preacher America has produced and one of the very best in the history of the church. His sermons are deeply spiritual and biblical, and saturated with insights into what it means concretely to be a (true) Christian. I doubt seriously whether one is able to go much deeper experientially in living out, or trying to live out, the Christian life which he so impressively articulates.. Brooks' writing is also extraordinarily beautiful, cloaked as it is in Our Lord's Grace. In his own way Brooks is as important to the church as a Kierkegaard or Barth is. Brooks had a clear calling as a preacher: and has left an imperishable record of that calling, faithful to Christ unto the very end. His sermons should be read countless times in the course of one's life, not just once, for their depths become more and more visible the greater is our faithfulness to Christ.

About the Author Gilbert Keith Chesterton was born in London, England, in 1874. He went on to study art at the Slade School, and literature at University College in London. Chesterton wrote a great deal of poetry, as well as works of social and literary criticism. Among his most notable books are "The Man Who Was Thursday", a metaphysical thriller, and "The Everlasting Man", a history of humankind's spiritual progress. After Chesterton converted to Catholicism in 1922, he wrote mainly on religious topics such as "Orthodoxy" and "Heretics". Chesterton is most known for creating the famous priest-detective character Father Brown, who first appeared in "The Innocence of Father Brown". Chesterton died in 1936 at the age of 62.

1 of 1 people found the following review helpful. Mixed Bag By Brad Shorr GK presents a series of brief sketches of various British types, providing insightful social commentary in the process. The cumulative effect is a fairly good portrait of English life in the early 1900's, but with a good deal less of the wit and tight reasoning that you see in most of his other works. On the other hand, there are a few sections that are as eloquent and insightful as anything I've read of GK. A real problem is that this particular edition contains no footnotes whatsoever. This makes it quite difficult to understand the full sense of GK's ideas, since the book is chock-full of obscure (today) references. Also this addition has typos all over the place.

Chesterton's "A Miscellany of Men" ranks as one of his best works as he offers essays covering just about everything under the sun from his finally finding a fool to his reactions to a fire in the neighborhood to his thoughts on mummers and masks. Chesterton is also at his most humorous as he transforms a Wordsworth poem into an ode to cheese and he writes about revisiting a house where he once scrawled funny poems on the walls. Of course, this being Chesterton, there are deeper meanings in all the funny stories and unforgettable sketches that he presents. Dale Ahlquist of the American Chesterton Society presents a solid introduction. Once again, readers are in debt to IHS Press which has restored yet another wonderful book into circulation.

I was surprised by the way the book was printed. There is a table of content but no page numbers...I should have looked at this aspect before I chose. And now I understand why I like real bookstores!

It gives you a complete guide on what you should do and what you should you prepare it times of disaster. This book will help you identify what are the important things you need to prepare just in case a disaster will come. Some of the important things you should prepare are water, non-perishable goods, flashlight w/ FM/AM radio, batteries for cellphone, first aid kit, clothes, bedding and money. Just like what they say "it's better to be prepared than sorry". I agree with the author that it is extremely beneficial if you take CPR and first aid class. Local Red Cross tends to provide this sort of training. I have done this training and I would suggest you should give it a try. It can really help your family and other people that may need help.

They see it just around the corner and that is to happen any time soon. Their belief in the end is strong so they don't agrue mush about how the world is going to end.Being a prepper means learning how they did things before the electricity. The preppers learn the same farming skills as their parents.One can learn what are the basics of prepping for a disaster, the best food to stockpile, how to store a water, how to store mediacations..There are also mistakes listed, that preppers can make.

By The Btch Has Spoken I was given an ARC copy in exchange for an honest review (to be honest I would have bought this anyway and my reviews are ALWAYS honest)Elemental picks right up where Equilibrium leaves us. The story centers around Grace Connors.... She went back in time to see her father and say goodbye (without him knowing it was her). Unfortunately, things didn't go as planned and her going back has possibly drastically changed the future.... for the worst. It is ESSENTIAL that you read the previous books before this one.Grace thinks when she is leaving her father that she is going home, however she ends up in another time and place and 10 years have passed. The world that she left is not what she left, and everyone around her aged while she is the same. She decides to try to fix what has happened which has led her on epic journey where she must adapt and learn to continue on. She is trying to get home, the home she remembers,not the place she ended up where she must kill specter hounds and bat winged human like creatures that survive on the flesh and blood of humans in the year 2020.While Grace in in the Old World, trying to find her way home, you also get to find out what her friends are doing and how they are surviving in 2020.... They have to fight to survive and no one is immune.The words "The only reality is right here, right now. The future is subjective, time is merely an illusion and nothing is ever set in stone." have never been truer and completely sums up this installment in the Paradox saga. It is so hard to review and not be a spoiler.I think if you mashed up Wizard of Oz, Back to the Future, Alice in Wonderland; you MAY come close to this book. The author, Patti Roberts, writes with amazing descriptions of the places and the characters. Each character is very well developed, you can't help but become emotionally and mentally involved with each person. I found myself holding my breath during some scenes and weeping in another. Patti's ability to draw you into her stories is unbelievable. From the description of Grace trying to ride a camel to learning to throw a spear, to dealing with a bathing ritual... I found myself laughing out loud and then crying... Each scene was beautifully written in it's own right, yes even the gruesome ones, because I could picture the words I was reading. Which by the way, do not fall asleep while reading or you will dream about Altair and the different lands there, just like I did.I could see the Paradox Saga becoming an amazing movie series and could see people going to a ComicCon dressed as their favorite paradox character. Definitely get this book but you MUST read the others before it. Everytime a new one comes out it gives me a great excuse to reread the series, they are really so good you will WANT to reread them.

I have read the rest of the series and believe that to get full enjoyment of this book, you really should read the rest of the series first.The Paradox story continues with Grace going back into the past in order to try to save Earth in 2020. At that time evil is running amok and humans are fighting to survive. All the commodities are running out and every day is a trial. Our main characters are experiencing life at that time and fighting the demons to live. At the same time, Grace is facing her own trials and tribulations in the past. She must learn to fight, to be a warrior in order to survive in the time she finds herself. She isn't even sure what she is doing will help the future, or if indeed she will get back to her friends in 2020. It's all just a matter of survival.There were many parts in the book that just amazed me. The author writes which such emotion, and despite writing some very gruesome scenes, she also puts some light hearted moments into the story which helps ease the tension you can start to feel with death always just around the corner for the characters in the story.These are just a few of some of my favourite scenes from the books, showing how descriptive the author's writing is:1. I have accepted my fate. I have been poked and prodded by every healer in the realm. I have worn every amulet blessed by the Gods, and have bathed in their oils until I wanted nothing more than to drown in them." She flicked the necklaces hanging around her neck, and the jeweled bracelets on her arms. "All of this, and nothing has worked." She slapped her lifeless legs, then shook them violently with her hands, as though trying to wake them from slumber.I just wanted to cry when I read this scene. The poor young girl shouldn't have had to go through what she did which crippled her...you'll have to read the book to find out what that was.2. The demons' bead-like eyes gleamed with an ominous black glow, as long, bloody drool dangled from their mouths before dripping onto the ground in pools of slimy mucus.This excerpt is a perfect example of both Patti Roberts' imagination, and her ultimate descriptive skills. The picture painted in the readers mind is vivid to the point of making you cringe. I wouldn't want to come across any of those particular demons!3. "Witjuti grubs are the larvae of cossid moths. You can eat them either raw or cooked, and they are very high in protein, and have a nutty, chicken egg flavor. When you cook them, the crisp skin tastes like roast chicken."The descriptiveness in this scene can't help but make you ask if Patti has indeed eaten a Witjuti grub herself. If she hasn't, then she certainly proves her skill at writing by making the reader wonder if she has.4. Grace groaned and squeezed her eyes tightly closed as the front legs of the camel bent first, then the rear, then the front legs again, until the camel was seated on the ground. Losing her grasp on the reins, she tumbled off the camel, landing face first in the sand.I love this scene because in a story fraught with chaos and death Patti delivers some much needed relief with humour.5. Grace leaned forward, peering over the edge of the howdah to watch the small fishing boats bob lazily up and down on the meandering river that separated the vast sands of the Utopia Desert from the green pastures of the Khnum Kingdom like a shimmering, golden blade, reminding Grace of one of Monet's famous waterscapes.Such beautiful descriptive writing, you can picture yourself floating along on one of those fishing boats. Patti's writing easily sets the scene for letting you enter the fantasy of the book.6. "Well now. Butter my butt, slap on a pickle and call me a cracker!"What can I say? Patti has such a way with words, this one liner was a laugh out loud moment for me.I could share many more excerpts from the book, but I don't want to give too many spoilers about things to come. I definitely recommend this book to people who like an exciting read, filled with beautiful scene setting, good verses evil, and the story of how hopefully Grace will be able to save the future. The paranormal aspects of the story are awesome too, we even get introduced to a dragon! And who doesn't love a dragon!

The second book is Paradox: Progeny Of Innocence. The third book is Paradox: Bound By Blood. The fourth book is Paradox: Equilibrium. This is the fifth book. I can't wait to read Paradox: Last Hope!!!Grace has been searching for Riley. She will not give up on finding him no matter how long it takes! Or how many different trips through time! She is a girl on a mission to save her one true love... And the rest of the worlds while she is at it. She doesn't know how or why things went so wrong. After all, she only meant to see her dad one last time. Will she find Riley? Will she save the worlds? Will she be able to fix anything she mucked up in the past and save the future? Or will the Grigori win and destroy all that is good and right?***This series is suitable for adult readers who enjoy horror in their dark fantasy time travel action adventures with lots of intrigue, suspense, thrills, and mysteries all with a dash of romance :)

Informative and uplifting By The Reviewer Formerly Known as Kurt Johnson In 1903, then president of Princeton University, Woodrow Wilson (1856-1924) returned to Wesleyan University, and gave a speech on the occasion of the bicentennial of the birth of John Wesley. Wilson’s speech was a wonderful look into the life and work of John Wesley, first providing a historical context, and then explain what he did and why. In 1915, not long after he had ascended to the Presidency of the United States, his speech was published as this short book.Overall, I must say that this book surprised me. It shows off President Wilson’s genius as a speaker, and as an educator. He does an excellent job of informing the reader about John Wesley and his times, and does it in a short and easy-to-understand manner. I must say that the more I read of Woodrow Wilson’s works, the more impressed I become. This is a great little book, informative and uplifting. I highly recommend it!

Ada Calhoun knows all, sees all, and blabs everything! I am just so enthusiastic about it I could spit! Buy it immediately, turn off your phone, and read it. If you haven't read Inside the Dream Palace, by Sherill Tippins, (about the Chelsea Hotel), get that book too and don't plan to do anything else the coming weekend.

2 of 2 people found the following review helpful. Buy This Book (or steal it) By Steve Gabe A 400 year adventure that all takes place on a three block stretch of NYC. Imagine looking out of a tenement window with your nose pressed up against the glass witnessing the good, the mostly bad (in a good way) and ugly (because the real often is) of buried time. This historical fiction novel is all about the haven for artistic freedom and it's origins rooted deep in the earliest Dutch settlers. Keep it on your bookshelf for reference and great B&W pictures of those moments from the past. Where did Sam Shepard get his start? Why were there riots in the late 1800's in Tompkins Sq. Park? Debbie Harry was a folk singer? In the 80's I owned a store called 109 St. Mark's Place 1983-90 b/w 1st and A and in the vingettes of that "Art Fags vs. Hard Core" era I'm reading words but I'm looking out that door and seeing it all over again. What a time we had, the time of our lives. Thanks for this great work. It's fun, fast and in depth like the different scenes it depicts.

Fantastic By Peter Smith This is a rich book, full of fascinating stories that are breezy and pleasurable to read in singular but add up to a moving sense of collective history and all the lives that passed through this one magnetic place. The research is extensive, the prose is sharp, and Calhoun has a wonderful eye for human behavior; she shades in the cruelty and irony and humor and tenderness of each moment in such a lovely, casual way that you hardly notice how affecting it all is until the book is over. It's a wonderful read, and really a must for anyone interested in New York, history, or counterculture.

When some time ago I published a series of hasty but sincere papers, under the name of "Heretics," several critics for whose intellect I have a warm respect (I may mention specially Mr. G. S. Street) said that it was all very well for me to tell everybody to affirm his cosmic theory, but that I had carefully avoided supporting my precepts with example. 231 of 240 people found the following review helpful. Entertaining, humorous, intelligent, and full of surprises By David Graham Portly, fun loving, witty G.K. Chesterton decided to write this book as a companion volume to his book HERETICS. Since HERETICS had criticised contemporary philosophies, ORTHODOXY was written to present an alternative viewpoint, and is therefore both affirmative in tone and autobiographical in many places. A sampling of his chapter titles gives some idea of Chesterton's sense of fun as well as his unusual approach to the matter of Christianity. Chapter one is "In Defense of Everything Else" (one pictures Chesterton with a whimsical, impish smile on his face as he wrote this). There are also chapters on "The Suicide of Thought", "The Ethics of Elfland" (a really superb chapter), "The Maniac", and "The Paradoxes of Christianity". In this easily readable book (only 160 pages in the small paperback edition), Chesterton shows that theological reflections and philosophical ruminations need be neither boring nor incomprehensible. This was jolly good fun to read, being both funny and intellectually stimulating. Highly recommended.

51 of 53 people found the following review helpful. From a Failed Pagan By A Customer Love this book. Chesterton is sort of the Mark Twain of apologetics. Reading it I found that I was laughing one minute and seriously blown away the next. I am not a Christian, but this book gave me hope that maybe there is a place for a logic and faith based Christianity which is both orthodox and stronger than a fearful fundamentalism. I like the fact that Chesterton opposes his critics while for the most part honestly respecting them as intelligent people. It's the sign of a man secure in his ideas.I would recommend this book to any other failed pagans out there. Would also be a good read for any agnostic interested in the role of imagination in simple, thoughtful living.

It is partly autobiographical, in the sense that Chesterton describes various insights into the nature of reality, and various puzzles about reality, and then shows how (to his astonishment) the Christian faith accounts for the insights and answers the puzzles.The following quote expresses this idea:"This, therefore, is, in conclusion, my reason for accepting the religion and not merely the scattered and secular truths out of the religion. I do it because the thing has not merely told this truth or that truth, but has revealed itself as a truth-telling thing. All other philosophies say the things that plainly seem to be true; only this philosophy has again and again said the thing that does not seem to be true, but is true. Alone of all creeds it is convincing where it is not attractive; it turns out to be right, like my father in the garden."But don't just take my word for it! About the Author Stefan Zweig (1881-1942) was an outstanding Austrian novelist, playwright, journalist, and biographer whose work became very popular in the US, South America, and Europe especially between the 1920s and 1930s. In 1904 he earned his doctorate degree in philosophy at the University of Vienna. Throughout his life he remained a pacifist, and instead of becoming a soldier at the start of World War I, he worked in the Archives of the Ministry of War. He became friends with notable people in history, including Romain Rolland, Sigmund Freud, and Arthur Schitzler. Among his most famous writings are Beware of Pity, Chess Story, and his memoir The World of Yesterday.

A close friend speaks By Meow Tomcat This is not the complete biography of Romain Rolland because the book was published in German in 1920 & translated into English in 1921. Rolland passed away in 1944. Stefan Zweig, himself a popular writer of novellas in the 1920's and 1930's, knew Rolland well. Rolland is praised at every turn but his life and works, principles and motives are explained clearly. Serious students of Rolland will find this book invaluable for placing Rolland in his own time. The writing style is from the 19th century. This book is available in Kindle and hard copy.

It was as if a fly-by-night editor did a real hack job on the printing. More often than seemed necessary, the type kept changing from large to small print, which was a bit disconcerting. Fortunately, the contents of the novel so overpowered me that I eventually adjusted to the abrupt changes. Are all Classic Reprints like this?

Written by a very knowledgeable scientist Maxwell gives his view of the relationship of mathematics and physics and how people come to understand abstract and foreign ideas. He also gives views on how the sciences and mathematics should be taught in schools. The book is a short read. I even learned that James Clerk Maxwell is a poet.

From the Back Cover No Englishman did more in the nineteenth century to advance the literary reputation of Henry David Thoreau than Henry S. Salt. A biographer and literary critic as well as a remarkable reformer, Salt participated broadly in his era's movements for social change, abandoning his mastership at Eton in the 1880s to devote himself to causes including socialism, vegetarianism, animals' rights, conservation, and prison reform.

In 1890 Salt published the initial version of Thoreau's Life. With the help of American friends, he revised the book and published it anew six years later. The present volume is the third version of the biography, completed in 1908 but never published in Salt's lifetime.

Combining a concise narrative of Thoreau's life with a perceptive treatment of his ideas and writings, Salt's work stands as a penetrating study of Thoreau that stresses his distinctive individuality. Through an astute analysis of the text and a concise biography, the editors illustrate Salt's growth as a scholar and his changing views on Thoreau and Thoreau's philosophy.

10 of 10 people found the following review helpful. An early Thoreau bio, this one from England By Corinne H. Smith Widespread fame eluded Henry David Thoreau (1817-1862) during his lifetime. Posthumous biographies helped to draw attention to his life in Concord and thus to his writings. These books can be shelved into four categories:(1) His journals themselves, in addition to his books and essays, provide the closest primary information. Chronologically though, they should be ranked third because they were made available to the public more than 40 years after his death when they were first printed in 1906.(2) A few friends and acquaintances released book-length biographies based on their personal relationships with the man. William Ellery Channing's _Thoreau: the poet-naturalist_ (1873) and Frank B. Sanborn's _American Men of Letters: Henry D. Thoreau_ (1882) are the classics.(3) Men who were inspired by Thoreau's writings began to correspond with his Concord friends in order to learn more and to write their own books. Examples include the 1890 publications of Henry S. Salt's _Life of Henry David Thoreau_ and Samuel Arthur Jones's _Thoreau: A Glimpse_.(4) Everyone who came afterward had to rely on interpretation of all of the writings and letters from those previous categories. The most famous remain Henry Seidel Canby (_Thoreau_, 1939) and Walter Harding (_The Days of Henry Thoreau: A Biography_, 1962).Englishman Henry S. Salt (1851-1939) published his first Thoreau biography in 1890, and released a revision in 1896. Neither one sold well. By 1908, he was looking for a publisher to print a third and more complete edition. While he spent the rest of his life in that search, his efforts were to no avail. But he sent a copy of all of his material to Professor Raymond Adams of the University of North Carolina, in the hopes that the professor would be able to use it for publication. Dr. Adams was too daunted when Henry Canby's book was released in 1939, and so Henry Salt's notes were archived with his own. That is, until they were found and reprinted here. The result is the best revision of Salt's meticulous research and correspondence, augmented by minor corrections made by the 20th-century compilers.Salt was a genuine Thoreau disciple, and so this biography paints a positive picture of the man. It's probably my second favorite, with Canby's being first. There may still be a few small errors that weren't fixed. (Thoreau's companion on the Minnesota trip was Horace Mann *Jr.*, a title needed to distinguish him from his more famous father.) Overall, though, this book is a welcome addition to the ranks, and we are lucky that the editors found the manuscript, prepared it, and shared it with the rest of us.

Good Biography by a Key Popularizer of Thoreau's Views By Henry Henry Salt's excellent biography of Thoreau helped popularize HDT's thought in Europe. More importantly, Salt befriended a young Gandhi who came to London to study law. From Salt Gandhi first learned of Thoreau's ideas on civil disobedience which he would put into practice in the Indian independence movement. Then through Gandhi's influence on Martin Luther King, Thoreau's influence returned to his own country.The Life of Henry David Thoreau insightfully describes how he took the concept self reliance as described by Emerson and built a life of integrity based on that principle. Thoreau graduated from Harvard and took a job as a teacher only to quit after only two weeks because he refused to use corporal punishment in his classroom. His time at Walden Pond is described in detail as well his abolitionist activities including his support of John Brown.Salt also describes Thoreau's deep connection with nature and his fascination with what eastern religions had to say about the relationship between humans and the rest of nature (Thoreau had the largest collection of books about eastern thought in the United States.)Salt displays a deep affection for Thoreau's personality and defends him from common beliefs that he was cold as a person. Although he valued his time alone, Thoreau enjoyed warm friendships with people of all sorts in Concord and was especially beloved by children for his exceptional ability to guide them on nature walks and explain the cycle of the seasons.Salt correctly notes that Thoreau did not grasp the social and economic forces that later generations began to realize had powerful sway on individuals and societies. This book aptly captures what Thoreau did understand as reflected in the groundbreaking work he did in describing the natural world, critiquing society and creating a new American voice in literature.
